Slow Cooker Beef Cubes (Tender & Flavorful)

🛒 Ingredients
2 lbs beef cubes (stew beef or chuck)
1 onion, chopped
3 cloves garlic, minced
1 cup beef broth
1 cup red wine (optional – replace with broth if omitted)
2 carrots, chopped
2 potatoes, chopped
1 tsp dried thyme
1 tsp salt (or to taste)
½ tsp black pepper
1 tbsp olive oil (optional, for richness)
1 tbsp flour or cornstarch (optional, for thickening)
🍲 Instructions
Add beef to slow cooker
Place the raw beef cubes directly into the slow cooker.
Add vegetables
Add onion, garlic, carrots, and potatoes over the beef.
Season
Sprinkle thyme, salt, and black pepper evenly over everything.
Add liquids
Pour in beef broth and red wine (if using). Add olive oil if desired.
Stir gently
Lightly mix to combine ingredients.
Cook
Cover and cook on LOW for 7–8 hours for very tender beef
Or HIGH for 4–5 hours
Optional thickening (last 30 minutes)
Mix 1 tbsp flour or cornstarch with 2 tbsp cold water
Stir into slow cooker, cover, and finish cooking
Taste & adjust
Adjust salt and pepper before serving.
