Introduction
This Cloud Cake is light as air, creamy, and delicately sweet. Made with simple ingredients and blended until smooth, it’s the kind of cake that feels indulgent but never heavy. Perfect with coffee or tea—and so easy you’ll find yourself making it again and again.
Description
Soft, jiggly, and cloud-like, this cake combines the richness of cream cheese with the lightness of whipped egg whites. The texture is silky, airy, and gently sweet, almost like a cross between cheesecake and sponge cake.
Ingredients
200 g (7 oz) cream cheese, softened
50 g (3 tbsp) unsalted butter, softened
100 ml (7 tbsp) milk
4 large eggs, separated
70 g (⅓ cup) granulated sugar
40 g (⅓ cup) cake flour
10 g (1 tbsp) cornstarch
1 tsp vanilla extract
Instructions

  1. Prepare the oven
    Preheat oven to 150°C / 300°F
    Line the bottom of a 20 cm (8-inch) round pan with parchment
    Wrap the outside of the pan with foil (for water bath)
  2. Blend the base
    In a blender, add:
    Cream cheese
    Butter
    Milk
    Egg yolks
    Vanilla extract
    Blend until completely smooth.
  3. Add dry ingredients
    Add cake flour and cornstarch to the blender.
    Blend briefly just until smooth.
    Pour mixture into a large bowl.
  4. Whip egg whites
    Beat egg whites until foamy.
    Gradually add sugar and beat until soft, glossy peaks form.
  5. Fold gently
    Gently fold egg whites into the batter in 3 additions.
    Use a spatula and light folding motion to keep air in.
  6. Bake (Water Bath)
    Pour batter into prepared pan.
    Place pan in a larger baking tray and add hot water halfway up the sides.
    Bake for 60 minutes at 150°C / 300°F.
    Turn oven off and leave cake inside for 15 minutes with door slightly open.
  7. Cool
    Remove from oven and water bath.
    Let cool completely before removing from pan.
    Tips for Success
    All ingredients must be room temperature
    Do not overmix after folding egg whites
    Soft peaks = lighter cake
    Cooling slowly prevents shrinking
    Optional Additions
    Lemon zest for freshness
    Powdered sugar dusting on top
    Fresh berries for serving
    A touch of honey instead of some sugar
