Peanut Butter Filling

🧺 Ingredients
Peanut Butter Filling
1 cup creamy peanut butter
¼ cup unsalted butter, softened
1½ cups powdered sugar
½ tsp vanilla extract
Chocolate Coating
1½ cups chocolate chips (milk, semi-sweet, or dark)
1 tbsp coconut oil or shortening (for smooth coating)
👩‍🍳 Instructions
Mix filling:
In a bowl, combine peanut butter, butter, powdered sugar, and vanilla until smooth and thick.
Form balls:
Roll mixture into 1-inch balls and place on a parchment-lined tray.
Chill:
Refrigerate for 30 minutes (or freeze 15 minutes) until firm.
Melt chocolate:
Melt chocolate chips and coconut oil in the microwave in 20-second intervals, stirring until smooth.
Dip:
Dip each ball into melted chocolate, coating completely.
Set:
Place back on parchment and refrigerate until chocolate hardens.

Makes: ~24 balls
