Smoked Bacon Triple-Cheese Cheeseburger Meatloaf Stack
Juicy, cheesy, and packed with smoky bacon flavor — like a stacked cheeseburger in meatloaf form!
📝 Ingredients:
1 lb (450g) ground beef
1 lb (450g) ground pork
1 cup breadcrumbs
2 eggs
1 small onion, finely diced
3 cloves garlic, minced
1/3 cup milk
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
🧀 Triple Cheese Filling:
1 cup shredded cheddar cheese
1 cup shredded mozzarella
6 slices American cheese
🥓 Topping:
8–10 slices smoked bacon
1/3 cup BBQ sauce (for glazing)
👩🍳 Instructions:
1️⃣ Prepare the Meat Mixture
In a large bowl, combine ground beef and pork.
Add breadcrumbs, eggs, milk, onion, garlic, ketchup, mustard, Worcestershire sauce, salt, pepper, and smoked paprika.
Mix gently until just combined (don’t overmix).
2️⃣ Form the Base
Preheat oven to 375°F (190°C).
Line a baking sheet with parchment paper.
Divide the meat mixture in half.
Shape the first half into a thick rectangular or round base.
3️⃣ Add the Cheese Layer
Sprinkle cheddar and mozzarella evenly over the base (leave edges clear).
Layer American cheese slices on top.
Place the remaining meat mixture on top and seal the edges well to keep cheese inside.
4️⃣ Add Bacon
Lay bacon slices across the top, slightly overlapping.
Tuck ends underneath if possible.
5️⃣ Bake
Bake for 45–55 minutes, or until internal temperature reaches 160°F (71°C).
Brush BBQ sauce on top during the last 10 minutes of baking.
6️⃣ Rest & Slice
Let rest for 10–15 minutes before slicing.
This keeps the cheese from running out too quickly.
