Cherry Bars (Soft & Buttery with Sweet Cherry Filling)
These classic cherry bars are tender, buttery, and topped with sweet cherry pie filling and a simple glaze — perfect for dessert or holidays.
🛒 Ingredients (9×13 inch pan)
For the Batter:
1 cup (226 g) unsalted butter, softened
2 cups (400 g) granulated sugar
4 large eggs
1 teaspoon vanilla extract
3 cups (375 g) all-purpose flour
1 teaspoon salt
¼ teaspoon baking powder
Filling:
1 can (21 oz / 595 g) cherry pie filling
Glaze:
1 cup (120 g) powdered sugar
2–3 tablespoons milk
½ teaspoon vanilla extract
👩‍🍳 Instructions
1️⃣ Preheat
Preheat oven to 175°C (350°F).
Grease a 9×13-inch baking pan or line with parchment paper.
2️⃣ Make the Batter
In a large bowl, cream butter and sugar until light and fluffy (about 3–4 minutes).
Beat in eggs one at a time.
Add vanilla extract.
In a separate bowl, whisk flour, salt, and baking powder.
Gradually mix dry ingredients into the wet mixture until combined.
3️⃣ Assemble
Spread about ⅔ of the batter evenly into the prepared pan.
Spoon cherry pie filling evenly over the batter.
Drop small spoonfuls of the remaining batter on top (it won’t fully cover — that’s okay).
4️⃣ Bake
Bake for 35–40 minutes or until golden brown and set in the center.
Cool completely before glazing.
5️⃣ Make the Glaze
Whisk powdered sugar, milk, and vanilla until smooth.
Drizzle over cooled bars.
✨ Tips
Let the bars cool fully before slicing for clean squares.
Add almond extract (½ teaspoon) for extra flavor.
Store covered at room temperature for 2 days or refrigerate up to 5 days.
