Sticky Oven-Baked Pork Belly Bites
🛒 Ingredients
1.5–2 lbs (700 g–1 kg) pork belly, cut into 1½-inch cubes
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika (smoked if possible)
For the Sticky Glaze:
½ cup soy sauce
½ cup brown sugar
2 tablespoons honey
3 cloves garlic, minced
1 tablespoon rice vinegar (or apple cider vinegar)
1 tablespoon oyster sauce (optional but delicious)
1 teaspoon grated ginger (optional)
👩‍🍳 Instructions
1️⃣ Preheat
Preheat oven to 190°C (375°F).
Line a baking tray with foil and lightly grease it.
2️⃣ Season the Pork
Pat pork belly dry with paper towels.
Toss with salt, pepper, garlic powder, and paprika.
3️⃣ First Bake (Render the Fat)
Arrange pork pieces in a single layer.
Bake for 30–35 minutes, flipping halfway through.
The fat will render and edges will start to crisp.
4️⃣ Make the Glaze
In a saucepan over medium heat, combine soy sauce, brown sugar, honey, garlic, vinegar, oyster sauce, and ginger.
Simmer for 5–7 minutes until slightly thickened.
5️⃣ Glaze & Caramelize
Remove pork from oven and drain excess fat carefully.
Brush or toss pork with the glaze.
Return to oven for another 15–20 minutes, until sticky and caramelized.
For extra crispiness, broil for 2–3 minutes at the end.
🔥 Pro Tips
The key to that amazing smell is the caramelizing sugar + rendered pork fat.
Don’t overcrowd the pan — space = crispiness.
Sprinkle sesame seeds or chopped green onions before serving.
