Baked Oatmeal with Carrots and Fruits

🛒 Ingredients (Serves 6–8)
2 cups rolled oats
1 cup grated carrots (about 2 medium carrots)
1 cup chopped fruits (apples, bananas, or pineapple work great)
¼ cup raisins or dried cranberries (optional)
2 large eggs
1 ¾ cups milk (dairy or almond milk)
⅓ cup maple syrup or honey
2 tablespoons melted butter or coconut oil
1 teaspoon vanilla extract
1 teaspoon cinnamon
½ teaspoon baking powder
¼ teaspoon salt
¼ teaspoon nutmeg (optional)
¼ cup chopped nuts (walnuts or pecans, optional)

1️⃣ Preheat
Preheat oven to 375°F (190°C).
Lightly grease an 8×8-inch baking dish.
2️⃣ Mix Dry Ingredients
In a large bowl, combine:
Rolled oats
Baking powder
Cinnamon
Nutmeg
Salt
3️⃣ Mix Wet Ingredients
In another bowl, whisk together:
Eggs
Milk
Maple syrup (or honey)
Melted butter
Vanilla
4️⃣ Combine
Stir grated carrots, chopped fruit, and raisins into the oat mixture.
Pour wet ingredients over dry and mix well.
Fold in nuts if using.
5️⃣ Bake
Pour mixture into prepared dish.
Bake for 35–40 minutes until set and lightly golden on top.
Center should be firm but moist.
