Beet & Burrata Salad with Pine Nuts

Ingredients:

  • 4 medium beets, cooked and sliced
  • 1 burrata cheese ball
  • 1/4 cup pine nuts, toasted
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 3 tablespoons extra-virgin olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  • In a small bowl, whisk together balsamic vinegar, honey, olive oil, salt, and pepper to make the dressing.
  • Arrange the sliced beets on a serving platter.
  • Tear the burrata cheese over the beets.
  • Drizzle the balsamic dressing over the salad.
  • Sprinkle with toasted pine nuts and garnish with fresh basil leaves.
