Classic Congo Bars
Thick, chewy, buttery blondie-style bars loaded with chocolate chips — rich, simple, and always a crowd favorite.
🛒 Ingredients (Makes 12–16 bars)
2 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
2/3 cup unsalted butter, melted
2 cups light brown sugar, packed
3 large eggs
1 tbsp vanilla extract
2 cups semi-sweet chocolate chips
1 cup chopped walnuts or pecans (optional)
👩🍳 Instructions
1️⃣ Preheat
Preheat oven to 350°F (175°C).
Grease or line a 9×13-inch baking pan with parchment paper.
2️⃣ Mix Dry Ingredients
In a bowl, whisk together:
Flour
Baking powder
Salt
Set aside.
3️⃣ Mix Wet Ingredients
In a large bowl:
Stir melted butter and brown sugar until smooth.
Add eggs one at a time, mixing well after each.
Stir in vanilla.
4️⃣ Combine
Gradually mix dry ingredients into wet mixture until just combined.
Fold in chocolate chips and nuts (if using).
5️⃣ Bake
Spread batter evenly into prepared pan.
Bake 25–30 minutes until golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
6️⃣ Cool & Slice
Let cool completely before cutting into squares for clean edges.
