Mediterranean Lemon Chicken with Artichokes & Olives
Bright, savory, and full of classic Mediterranean flavors — perfect for an easy weeknight dinner or elegant meal.
🛒 Ingredients (Serves 4)
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 lemon (zest and juice)
2 teaspoons dried oregano
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup artichoke hearts, drained and chopped
1/2 cup Kalamata olives, pitted and sliced
1/4 cup fresh parsley, chopped
1/2 cup chicken broth
1 tablespoon capers (optional)
👩‍🍳 Instructions
1️⃣ Season the Chicken
Pat chicken dry.
In a small bowl, mix:
Lemon zest
Oregano
Garlic powder
Salt
Black pepper
Rub seasoning evenly over both sides of the chicken.
2️⃣ Sear
Heat olive oil in a large skillet over medium-high heat.
Add chicken and cook 4–5 minutes per side until golden brown.
Remove from pan and set aside (it will finish cooking later).
3️⃣ Build the Sauce
In the same skillet:
Add chicken broth and lemon juice.
Scrape up any browned bits from the bottom of the pan.
Stir in artichokes, olives, and capers (if using).
Let simmer 3–4 minutes.
4️⃣ Finish Cooking
Return chicken to the skillet.
Spoon sauce over the top.
Cover and simmer on medium-low for 6–8 minutes, or until chicken reaches 165°F (75°C) internal temperature.
5️⃣ Garnish & Serve
Sprinkle fresh parsley on top before serving.
