Slow Cooker Family-Style Beef Stroganoff
Tender beef, rich mushroom gravy, and creamy sauce — perfect comfort food for the whole family.
🛒 Ingredients (Serves 6–8)
2–2½ lbs beef chuck roast or stew meat, cut into chunks
1 tsp salt
½ tsp black pepper
1 tsp paprika
1 small onion, finely chopped
3 cloves garlic, minced
8 oz (225 g) mushrooms, sliced
2 cups beef broth
1 tbsp Worcestershire sauce
1 tsp Dijon mustard (optional, but recommended)
1 tbsp tomato paste
2 tbsp flour or cornstarch (for thickening)
1 cup sour cream (room temperature)
12 oz egg noodles
2 tbsp butter
Fresh parsley for garnish (optional)
👩‍🍳 Instructions
1️⃣ Prepare the Beef
Season beef with salt, pepper, and paprika.
(Optional: Sear in a hot skillet with a little oil for 2–3 minutes per side for extra flavor.)
2️⃣ Slow Cook
Add beef, onion, garlic, mushrooms, beef broth, Worcestershire sauce, Dijon, and tomato paste to the slow cooker.
Stir gently.
Cook on:
Low: 7–8 hours
High: 4–5 hours
Beef should be very tender.
3️⃣ Thicken the Sauce
In a small bowl, mix flour (or cornstarch) with 2–3 tbsp cold water to form a slurry.
Stir into the slow cooker during the last 30 minutes. Let sauce thicken.
4️⃣ Finish with Creaminess
Turn slow cooker to low.
Stir in sour cream gently until smooth and creamy. Do not boil after adding sour cream.
5️⃣ Cook Noodles
Boil egg noodles according to package directions. Drain and toss with butter.
6️⃣ Serve
Serve stroganoff over buttered noodles. Garnish with fresh parsley.
