Oven Baked Sausages with Caramelised Onions
Juicy sausages roasted until golden, topped with sweet, deeply caramelised onions — simple, comforting, and full of flavor.
🛒 Ingredients
8 pork sausages (or beef/chicken sausages)
3 large yellow onions, thinly sliced
2 tablespoons olive oil
1 tablespoon butter
1 teaspoon salt (divided)
½ teaspoon black pepper
1 teaspoon brown sugar (optional, helps caramelization)
1 tablespoon balsamic vinegar (optional but delicious)
½ teaspoon dried thyme (optional)
👩🍳 Instructions
1️⃣ Preheat Oven
Preheat oven to 400°F (200°C).
Lightly grease a baking dish or sheet pan.
2️⃣ Start the Onions
In a large skillet over medium heat, add olive oil and butter.
Add sliced onions and ½ teaspoon salt.
Cook 10–15 minutes, stirring occasionally, until soft and lightly golden.
Add brown sugar and cook another 5–10 minutes until deeply caramelised.
Stir in balsamic vinegar and thyme (if using).
Remove from heat.
(You can skip pre-cooking, but caramelizing first gives much better flavor.)
3️⃣ Bake the Sausages
Arrange sausages in the baking dish.
Spoon caramelised onions over and around them.
Bake 25–30 minutes, turning sausages halfway through, until browned and cooked through (internal temp 160°F / 71°C for pork).
4️⃣ Optional Final Browning
Broil 2–3 minutes at the end for extra color.
