Cheesy Roast Beef Biscuit Melts
🛒 Ingredients
1 can refrigerated biscuit dough (8 biscuits)
2 cups cooked shredded beef (roast beef or brisket)
1 cup shredded mozzarella cheese
1 cup shredded cheddar or provolone cheese
2 tbsp mayonnaise or sour cream
1 tbsp Worcestershire sauce (optional but great flavor)
1 tbsp melted butter
1/2 tsp garlic powder
1/2 tsp dried parsley or thyme
👩🍳 Instructions
1️⃣ Preheat Oven
Preheat to 375°F (190°C).
Line a baking sheet with parchment paper.
2️⃣ Prepare the Biscuits
Separate biscuits and gently split each one in half horizontally (like a sandwich bun).
Place bottom halves on baking sheet.
3️⃣ Prepare the Beef Filling
In a bowl, mix:
Shredded beef
Worcestershire sauce
Mayonnaise or sour cream
Stir until lightly coated (this keeps it juicy).
4️⃣ Assemble
Spoon beef mixture onto each biscuit bottom.
Sprinkle a little mozzarella over beef.
Place the top half of biscuit back on.
Generously top each biscuit with cheddar/provolone.
5️⃣ Season & Bake
Mix melted butter with garlic powder.
Brush lightly over tops.
Bake for 15–18 minutes, until biscuits are golden and cheese is bubbly and melted.
Broil for 1–2 minutes at the end if you want extra golden tops.
6️⃣ Finish
Sprinkle dried parsley or thyme over the top.
Let cool 5 minutes before serving.
