Poor Man’s Stew (Simple, Hearty & Budget-Friendly)
A filling one-pot meal made with affordable pantry staples — comforting, rich, and perfect for feeding a family.
🛒 Ingredients
1 lb (450 g) ground beef
1 small onion, chopped
2–3 medium potatoes, peeled and cubed
2 carrots, sliced
1 can (15 oz) diced tomatoes (with juice)
1 can (15 oz) tomato sauce
2 cups beef broth (or water + bouillon)
1 tsp garlic powder
1 tsp paprika
1/2 tsp dried thyme (optional)
Salt & black pepper to taste
👩‍🍳 Instructions
1️⃣ Brown the Beef
In a large pot over medium heat, cook ground beef and onion until browned.
Drain excess grease.
2️⃣ Add the Vegetables
Stir in potatoes and carrots.
3️⃣ Add Liquids & Seasoning
Pour in diced tomatoes, tomato sauce, and beef broth.
Add garlic powder, paprika, thyme, salt, and pepper.
Stir well.
4️⃣ Simmer
Bring to a boil, then reduce heat to low.
Cover and simmer for 25–30 minutes, until potatoes and carrots are tender.
Stir occasionally.
5️⃣ Serve
Taste and adjust seasoning if needed.
Serve hot with bread or cornbread.
