Pancakes for Supper (Fluffy & Easy)
Perfect for a cozy dinner — serve them sweet or savory!
🧾 Ingredients
1½ cups all-purpose flour
3½ teaspoons baking powder
1 tablespoon sugar (optional, for lightly sweet pancakes)
½ teaspoon salt
1¼ cups milk
1 egg
3 tablespoons melted butter (or oil)
1 teaspoon vanilla extract (optional)
👩‍🍳 Instructions
Mix dry ingredients:
In a large bowl, whisk together flour, baking powder, sugar, and salt.
Mix wet ingredients:
In another bowl, whisk milk, egg, melted butter, and vanilla.
Combine:
Pour wet ingredients into dry ingredients. Stir gently until just combined. (Small lumps are okay — don’t overmix!)
Cook:
Heat a non-stick pan or griddle over medium heat.
Lightly grease with butter or oil.
Pour about ¼ cup batter for each pancake.
Cook 2–3 minutes until bubbles form on top.
Flip and cook another 1–2 minutes until golden.
Serve warm!
