Ingredients
2 tablespoons olive oil
1 lb smoked sausage (such as andouille), sliced
1 small onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
4 cups green cabbage, chopped
1 cup long-grain rice (uncooked)
2 cups chicken broth
1 cup diced tomatoes (canned or fresh)
1 teaspoon Cajun seasoning
1/2 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon cayenne pepper (optional for heat)
2 tablespoons chopped parsley (for garnish)
Instructions
Cook the sausage
Heat olive oil in a large skillet or pot over medium heat. Add the sliced sausage and cook for 4–5 minutes until browned.
Sauté vegetables
Add chopped onion and bell pepper. Cook for 3–4 minutes until softened. Stir in minced garlic and cook for another minute.
Add cabbage
Stir in the chopped cabbage and cook for 5 minutes, stirring occasionally, until slightly softened.
Add rice and seasoning
Mix in the uncooked rice, Cajun seasoning, paprika, thyme, black pepper, salt, and cayenne pepper.
Add liquids
Pour in the chicken broth and diced tomatoes. Stir well to combine.
Simmer
Bring to a gentle boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until the rice is tender and the liquid is absorbed.
Finish and serve
Fluff the jambalaya with a fork and sprinkle with chopped parsley before serving.
Tips
Use andouille sausage for a more authentic Cajun flavor.
Add shrimp or chicken for extra protein.
If you like it spicy, increase the cayenne pepper or add hot sauce.
