Creamy Chicken Potato Bake 🍗🥔
Ingredients
2 cups cooked chicken, shredded or diced
4 medium potatoes, peeled and thinly sliced
1 cup heavy cream
1/2 cup milk
1 cup shredded cheddar cheese
1/2 cup grated mozzarella cheese
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons butter
1 teaspoon paprika
1/2 teaspoon dried thyme (optional)
Salt and black pepper to taste
2 tablespoons chopped parsley (for garnish)
Instructions
Preheat oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
Cook the onion and garlic: In a pan over medium heat, melt the butter. Add chopped onion and sauté for 3–4 minutes until soft. Add garlic and cook for another minute.
Prepare the cream mixture: Stir in the heavy cream, milk, paprika, thyme, salt, and pepper. Let it simmer for 2–3 minutes.
Layer the bake:
Place half of the sliced potatoes in the baking dish.
Add half of the cooked chicken on top.
Pour some of the cream mixture over it.
Repeat with remaining potatoes and chicken.
Add cheese: Sprinkle cheddar and mozzarella evenly over the top.
Bake uncovered for 40–45 minutes or until the potatoes are tender and the cheese is golden and bubbly.
Rest and serve: Let it sit for 5–10 minutes before serving. Garnish with chopped parsley.
Tips
Add broccoli, mushrooms, or spinach for extra vegetables.
Rotisserie chicken works great for this recipe.
For a crispy top, broil the casserole for the last 2–3 minutes.
