Slow Cooker Pork Loin

Ingredients
Main Ingredients

2–3 pounds pork loin roast

1 tablespoon olive oil

4 cloves garlic, minced

1 medium onion, sliced

1 cup chicken broth

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

1 tablespoon brown sugar

1 teaspoon dried thyme

1 teaspoon dried rosemary

½ teaspoon black pepper

½ teaspoon salt

Optional Vegetables

3 carrots, chopped

3 potatoes, cubed

1 cup mushrooms

Instructions

  1. Prepare the Pork

Pat the pork loin dry with paper towels and season with salt and pepper.

  1. Sear the Pork (Optional but Recommended)

Heat olive oil in a skillet over medium-high heat and sear the pork loin on all sides for 2–3 minutes until browned.

  1. Add Ingredients to Slow Cooker

Place sliced onions and optional vegetables in the bottom of the slow cooker. Place the pork loin on top.

  1. Make the Sauce

In a bowl mix together:

chicken broth

soy sauce

Worcestershire sauce

brown sugar

garlic

thyme

rosemary

Pour the mixture over the pork.

  1. Cook

Cover and cook on:

LOW: 6–8 hours

HIGH: 3–4 hours

until the pork is tender and reaches an internal temperature of 145°F (63°C).

  1. Rest and Slice

Remove the pork from the slow cooker and let it rest for 5 minutes before slicing.

  1. Serve

Serve sliced pork with the cooking juices spooned over the top.
