🧾 Ingredients (Makes 9–12 bars)
🥧 Crust:
2 cups graham cracker crumbs
1/2 cup (115 g) melted butter
1/4 cup (50 g) sugar
🍓 Cream Cheese Filling:
450 g (16 oz) cream cheese, softened
3/4 cup (150 g) sugar
2 large eggs
1 tsp vanilla extract
1/2 cup strawberry puree (blend fresh strawberries)
1 tbsp all-purpose flour
🍫 Chocolate Ganache:
1 cup (170 g) semi-sweet chocolate (chopped or chips)
1/2 cup (120 ml) heavy cream
👩‍🍳 Instructions

  1. Prepare the Crust
    Preheat oven to 180°C (350°F)
    Mix graham crumbs, melted butter, and sugar
    Press firmly into a lined 9×9-inch (23×23 cm) baking pan
    Bake for 8–10 minutes, then let cool
  2. Make the Filling
    Beat cream cheese until smooth
    Add sugar and mix well
    Add eggs one at a time, mixing gently
    Stir in vanilla, strawberry puree, and flour
    Mix until smooth and creamy
  3. Bake
    Pour filling over cooled crust
    Bake at 160°C (320°F) for 30–35 minutes
    Center should be slightly set but still soft
    Cool completely, then chill for at least 2–3 hours
  4. Make Chocolate Ganache
    Heat cream until hot (not boiling)
    Pour over chocolate
    Let sit 1–2 minutes, then stir until smooth
  5. Assemble
    Pour ganache over chilled bars
    Spread evenly
    Refrigerate another 1 hour until set
  6. Slice & Serve
    Cut into bars
    Garnish with fresh strawberries if desired 🍓
