Aunt Betty’s Homestyle Noodles Romanoff
🧾 Ingredients:
12 oz egg noodles
1 cup sour cream
1 cup cottage cheese
1 cup shredded sharp cheddar cheese
½ cup grated Parmesan cheese
4 tbsp butter (melted)
2 cloves garlic, minced
½ small onion, finely chopped
1 tsp salt (or to taste)
½ tsp black pepper
1 tsp paprika (optional, for warmth)
2 tbsp chopped fresh parsley (optional)
👩🍳 Instructions:
- Cook the noodles
Boil egg noodles in salted water until tender.
Drain and set aside. - Sauté aromatics
In a pan, melt a bit of butter.
Cook onion until soft, then add garlic and cook 1 minute. - Make the creamy mixture
In a large bowl, combine sour cream, cottage cheese, cheddar, and half the Parmesan.
Stir in melted butter, onion, garlic, salt, pepper, and paprika. - Combine
Add cooked noodles and gently toss until fully coated. - Bake
Transfer to a greased baking dish.
Sprinkle remaining Parmesan on top.
Bake at 180°C (350°F) for 25–30 minutes until hot and bubbly.
😋 Tips:
For extra richness, add a splash of cream or a bit of cream cheese.
Want protein? Add diced ham or shredded chicken.
Broil the top for 2–3 minutes for a golden crust.
