Beet Avocado Orange Salad
📝 Ingredients
3 medium beets, cooked (roasted or boiled), peeled & sliced
2 ripe avocados, sliced
2 oranges, peeled and segmented
¼ red onion, thinly sliced
2 cups mixed greens (arugula, spinach, or lettuce)
¼ cup feta cheese (optional, crumbled)
2 tbsp toasted walnuts or almonds (optional)
🍋 Dressing
3 tbsp olive oil
1 tbsp fresh lemon juice (or orange juice for sweeter taste)
1 tsp honey (or maple syrup)
1 tsp Dijon mustard
Salt & black pepper, to taste
🥣 Instructions
- Prepare the Beets
If raw:
Wrap in foil and roast at 200°C (400°F) for 40–50 minutes
Let cool, then peel and slice
(You can also use pre-cooked beets to save time.) - Make the Dressing
In a small bowl, whisk together olive oil, lemon juice, honey, mustard, salt, and pepper until smooth. - Assemble the Salad
On a large plate or bowl:
Spread the greens
Arrange beet slices, avocado, and orange segments
Add red onion slices - Finish
Drizzle dressing over the salad
Top with feta cheese and nuts if using
