Berry Cheesecake Salad
🧾 Ingredients:
200 g cream cheese (softened)
1 cup (240 ml) heavy whipping cream (cold)
1/3–1/2 cup powdered sweetener (erythritol or preferred keto sweetener)
1 tsp vanilla extract
1 tbsp lemon juice (optional, for freshness)
🍓 Berries:
1 cup strawberries, sliced
1/2 cup blueberries
1/2 cup raspberries
1/2 cup blackberries
👩‍🍳 Instructions:

  1. Make the cheesecake base
    In a bowl, beat cream cheese until smooth
    Add sweetener and vanilla, mix well
  2. Whip the cream
    In another bowl, whip heavy cream until soft peaks form
  3. Combine
    Gently fold whipped cream into the cream cheese mixture
    Add lemon juice if using
  4. Add berries
    Gently fold in all the fresh berries
    (or reserve some for topping)
  5. Chill
    Refrigerate for 30–60 minutes before serving
    🍨 Serving:
    Serve chilled in bowls or dessert cups
    Top with extra berries or a sprinkle of crushed nuts
