Cheesy Baked Stuffed Tomatoes with Eggs & Sausage
🧾 Ingredients:
4 large tomatoes
4 eggs
150–200 g sausage (cooked and crumbled)
1/2 cup (50 g) shredded cheese (cheddar, mozzarella, or mix)
2 tbsp grated Parmesan cheese
2 tbsp chopped fresh parsley (optional)
1 tbsp olive oil
Salt and black pepper, to taste
1/2 tsp paprika or chili flakes (optional)
👩🍳 Instructions:
- Prepare the tomatoes
Preheat oven to 180°C (350°F)
Slice the tops off the tomatoes and scoop out the pulp carefully
Lightly salt the inside and place them upside down on paper towels for a few minutes to drain excess liquid - Cook the sausage
In a pan, cook sausage over medium heat until browned
Drain excess fat and set aside - Assemble the filling
Place tomatoes in a greased baking dish
Add a layer of:
cooked sausage
a bit of shredded cheese - Add the eggs
Crack one egg into each tomato
Season with salt, pepper, and paprika - Top with cheese
Sprinkle remaining shredded cheese and Parmesan on top - Bake
Bake for 18–25 minutes, depending on how runny or set you like your eggs
shorter time = soft yolk
longer time = fully set - Garnish & serve
Drizzle lightly with olive oil and sprinkle parsley before serving
