Cheesy Baked Stuffed Tomatoes with Eggs & Sausage
🧾 Ingredients:
4 large tomatoes
4 eggs
150–200 g sausage (cooked and crumbled)
1/2 cup (50 g) shredded cheese (cheddar, mozzarella, or mix)
2 tbsp grated Parmesan cheese
2 tbsp chopped fresh parsley (optional)
1 tbsp olive oil
Salt and black pepper, to taste
1/2 tsp paprika or chili flakes (optional)
👩‍🍳 Instructions:

  1. Prepare the tomatoes
    Preheat oven to 180°C (350°F)
    Slice the tops off the tomatoes and scoop out the pulp carefully
    Lightly salt the inside and place them upside down on paper towels for a few minutes to drain excess liquid
  2. Cook the sausage
    In a pan, cook sausage over medium heat until browned
    Drain excess fat and set aside
  3. Assemble the filling
    Place tomatoes in a greased baking dish
    Add a layer of:
    cooked sausage
    a bit of shredded cheese
  4. Add the eggs
    Crack one egg into each tomato
    Season with salt, pepper, and paprika
  5. Top with cheese
    Sprinkle remaining shredded cheese and Parmesan on top
  6. Bake
    Bake for 18–25 minutes, depending on how runny or set you like your eggs
    shorter time = soft yolk
    longer time = fully set
  7. Garnish & serve
    Drizzle lightly with olive oil and sprinkle parsley before serving

    💡 Tips:
    Use firm tomatoes so they hold their shape
    Add sautéed onions, spinach, or mushrooms for extra flavor
    For a spicy kick, use spicy sausage or add chili flakes 🌶️
    Serve with toasted bread to soak up the yolk
