Creamy Cauliflower Gratin
🧾 Ingredients:
1 large head cauliflower, cut into florets
1 tsp salt (plus more to taste)
2 tbsp olive oil
2 large eggs
30 ml (2 tbsp) heavy cream (or half-and-half)
Black pepper, to taste
50 g (½ cup) grated Parmesan cheese
100 g (1 cup) shredded mozzarella cheese
👩🍳 Instructions:
- Prep the cauliflower
Bring a pot of salted water to a boil.
Add cauliflower florets and cook for 5–7 minutes until just tender.
Drain well and let cool slightly.
Pat dry to remove excess moisture (important for a creamy—not watery—gratin). - Preheat oven
Preheat oven to 180°C (350°F)
Lightly grease a baking dish - Make the creamy mixture
In a bowl, whisk together:
eggs
heavy cream
olive oil
salt and black pepper - Assemble
Arrange cauliflower evenly in the baking dish
Pour the egg-cream mixture over the top
Sprinkle:
Parmesan cheese
mozzarella cheese - Bake
Bake for 25–30 minutes, until:
top is golden and bubbly
center is set - Cool & serve
Let rest for 5–10 minutes before serving
