Creamy Cauliflower Gratin
🧾 Ingredients:
1 large head cauliflower, cut into florets
1 tsp salt (plus more to taste)
2 tbsp olive oil
2 large eggs
30 ml (2 tbsp) heavy cream (or half-and-half)
Black pepper, to taste
50 g (½ cup) grated Parmesan cheese
100 g (1 cup) shredded mozzarella cheese
👩‍🍳 Instructions:

  1. Prep the cauliflower
    Bring a pot of salted water to a boil.
    Add cauliflower florets and cook for 5–7 minutes until just tender.
    Drain well and let cool slightly.
    Pat dry to remove excess moisture (important for a creamy—not watery—gratin).
  2. Preheat oven
    Preheat oven to 180°C (350°F)
    Lightly grease a baking dish
  3. Make the creamy mixture
    In a bowl, whisk together:
    eggs
    heavy cream
    olive oil
    salt and black pepper
  4. Assemble
    Arrange cauliflower evenly in the baking dish
    Pour the egg-cream mixture over the top
    Sprinkle:
    Parmesan cheese
    mozzarella cheese
  5. Bake
    Bake for 25–30 minutes, until:
    top is golden and bubbly
    center is set
  6. Cool & serve
    Let rest for 5–10 minutes before serving

    Tender cauliflower baked in a creamy, cheesy custard, topped with a golden, bubbly crust—simple yet incredibly satisfying!
    💡 Tips:
    Add garlic or sautéed onions for deeper flavor
    Sprinkle breadcrumbs on top for a crispy finish

    Use Gruyère instead of mozzarella for a richer, French-style taste
