Oklahoma Nut Candy
🧾 Ingredients:
2 cups (400 g) granulated sugar
1 cup (240 ml) whole milk
1 stick (115 g) butter
1 tsp vanilla extract
1–1½ cups chopped nuts (pecans or walnuts work best)

- Prep
Lightly butter a square pan or line it with parchment paper
Have nuts measured and ready - Cook the candy
In a heavy saucepan, combine:
sugar
milk
butter
Cook over medium heat, stirring until everything dissolves - Boil to soft-ball stage
Bring mixture to a gentle boil
Stop stirring and let it cook until it reaches soft-ball stage (about 115°C / 240°F)
If no thermometer: drop a little into cold water—it should form a soft ball - Cool slightly
Remove from heat and let sit 5 minutes (do not stir yet) - Beat & flavor
Add vanilla extract
Beat the mixture with a spoon or mixer until it thickens and loses its glossy shine - Add nuts
Fold in chopped nuts quickly - Set
Pour into prepared pan and spread evenly
Let cool completely until firm - Cut & serve
Cut into squares or pieces
