Oklahoma Nut Candy
🧾 Ingredients:
2 cups (400 g) granulated sugar
1 cup (240 ml) whole milk
1 stick (115 g) butter
1 tsp vanilla extract
1–1½ cups chopped nuts (pecans or walnuts work best)
👩‍🍳 Instructions:

  1. Prep
    Lightly butter a square pan or line it with parchment paper
    Have nuts measured and ready
  2. Cook the candy
    In a heavy saucepan, combine:
    sugar
    milk
    butter
    Cook over medium heat, stirring until everything dissolves
  3. Boil to soft-ball stage
    Bring mixture to a gentle boil
    Stop stirring and let it cook until it reaches soft-ball stage (about 115°C / 240°F)
    If no thermometer: drop a little into cold water—it should form a soft ball
  4. Cool slightly
    Remove from heat and let sit 5 minutes (do not stir yet)
  5. Beat & flavor
    Add vanilla extract
    Beat the mixture with a spoon or mixer until it thickens and loses its glossy shine
  6. Add nuts
    Fold in chopped nuts quickly
  7. Set
    Pour into prepared pan and spread evenly
    Let cool completely until firm
  8. Cut & serve
    Cut into squares or pieces

    Work quickly after beating—the mixture sets fast
