Old-Fashioned Banana Pudding
🧾 Ingredients:
3–4 ripe bananas, sliced
1 box vanilla wafers (about 300 g)
3 cups (720 ml) whole milk
3/4 cup (150 g) sugar
1/4 cup (30 g) all-purpose flour
1/4 tsp salt
3 large eggs (separated)
1 tsp vanilla extract
2 tbsp butter
👩🍳 Instructions:
- Make the custard
In a saucepan, whisk together:
sugar
flour
salt
Gradually add milk, whisking until smooth
Cook over medium heat, stirring constantly until thickened - Temper the eggs
In a bowl, lightly beat the egg yolks
Slowly add a little hot milk mixture to the yolks (to warm them)
Pour back into the saucepan and cook 2–3 more minutes - Finish custard
Remove from heat
Stir in butter and vanilla extract - Layer the pudding
In a baking dish:
Layer vanilla wafers
Add sliced bananas
Pour some warm custard
Repeat layers, ending with custard on top - Make meringue (optional but traditional)
Beat egg whites until soft peaks form
Gradually add 2–3 tbsp sugar and beat until stiff peaks form
Spread over the pudding - Bake (if using meringue)
Bake at 180°C (350°F) for 10–15 minutes until lightly golden - Chill
Let cool, then refrigerate for at least 2 hours
🍨 Serving:
Serve chilled or slightly warm
Scoop into bowls

💡 Tips:
Use ripe (but not overripe) bananas
For extra flavor, add a pinch of cinnamon
If you skip meringue, top with whipped cream instead
Best eaten within 1–2 days
