📝 Ingredients (Serves 6–8)
2 cups cottage cheese
3 large eggs
½ cup Greek yogurt or sour cream
¼ cup honey or maple syrup
1 tsp vanilla extract
½ cup all-purpose flour (or almond flour for low-carb)
1 tsp baking powder
1½ cups fresh or frozen blueberries
Pinch of salt
Optional:
Zest of ½ lemon
Powdered sugar for topping
👩‍🍳 Instructions
1️⃣ Preheat
Preheat oven to 350°F (175°C).
Grease an 8×8-inch baking dish or line with parchment paper.
2️⃣ Blend the Base
In a blender or bowl, combine:
Cottage cheese
Eggs
Greek yogurt
Honey
Vanilla
Salt
Blend until smooth (or whisk for a slightly textured bake).
3️⃣ Add Dry Ingredients
Stir in:
Flour
Baking powder
Mix until just combined.
4️⃣ Fold in Blueberries
Gently fold in blueberries.
Pour mixture into prepared baking dish.
5️⃣ Bake
Bake for 40–50 minutes, until:
Top is golden
Center is set but slightly soft
Let cool 10–15 minutes before slicing.
6️⃣ Serve
Top with:
Fresh blueberries
Powdered sugar
Extra drizzle of honey
Greek yogurt
