Garlic Herb Roasted Veggies
Ingredients:
2 cups carrots, peeled and chopped
2 cups zucchini, chopped
1 cup bell peppers, sliced
2 tbsp olive oil
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions:
Preheat your oven to 400°F (200°C).
In a large bowl, toss the chopped vegetables with olive oil, minced garlic, oregano, thyme, salt, and pepper.
Spread the veggies evenly on a baking sheet lined with parchment paper.
Roast for 25-30 minutes, stirring halfway through, until the vegetables are tender and lightly browned.
Garnish with fresh parsley and serve as a side dish to any main course. Enjoy!
