Baked Salmon in Foil with Asparagus
Ingredients (serves 2–4)
2–4 salmon fillets (about 6 oz / 170 g each)1 bunch asparagus, ends trimmed3–4 tbsp unsalted butter, melted3 cloves garlic, minced1 lemon (zest + juice)1–2 tbsp olive oilSalt & black pepper, to tasteOptional: red pepper flakes, fresh parsley or dillInstructionsPreheat oven to 400°F (200°C).Tear off a large piece of foil and place it on a baking sheet.Toss asparagus with olive oil, salt, and pepper, then arrange in the center of the foil.Place salmon fillets on top of or beside the asparagus.In a small bowl, mix:Melted butterGarlicLemon juice & zestSalt & pepperPour butter mixture evenly over salmon and asparagus.Sprinkle with red pepper flakes if using.Fold foil tightly to seal and create a packet.Bake for 15–18 minutes, or until salmon flakes easily.Optional: Open foil and broil 2–3 minutes for lightly crisp edges.Garnish with fresh herbs and extra lemon slices.TipsThicker salmon?
