1 pound ground beef
1/2 pound ground pork
1 cup breadcrumbs
1/2 cup milk
1/2 cup grated Parmesan cheese
1/2 cup finely chopped onions
1 cup finely chopped mushrooms
4 slices bacon, cooked and crumbled
1 cup shredded Swiss cheese
2 large eggs
1 tablespoon Worcestershire sauce
1 tablespoon ketchup
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup ketchup (for topping)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Cook the Mushrooms and Onions: In a skillet, cook the mushrooms and onions until softened, about 5-6 minutes. Add garlic and cook for another minute. Set aside to cool.
- Prepare Meat Mixture: In a large bowl, mix together the ground beef, ground pork, cooked mushrooms, Swiss cheese, bacon, breadcrumbs, milk, egg, Worcestershire sauce, ketchup, salt, and pepper until combined.
- Form the Meatloaf: Transfer the mixture to a baking sheet or loaf pan and shape it into a loaf.
- Top with Bacon: (Optional) Lay additional bacon slices on top of the meatloaf.
- Bake: Bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
- Add Topping and Broil: Brush with ketchup on top for a glaze. Broil for 3-4 minutes for a nice finish.
- Serve: Let rest for a few minutes, garnish with parsley, slice, and enjoy!
