Baileys Cheesecake Bites

These delightful Baileys cheesecake bites are a no-bake treat, perfect for any occasion! Easy to make and bursting with creamy goodness.

Ingredients:

  • 200g digestive biscuits, crushed
  • 100g cream cheese, softened
  • 150ml Baileys Irish Cream
  • 100g powdered sugar
  • 200g chocolate, melted (for coating)
  • Cocoa powder or sprinkles (for garnish)

Instructions:

  1. In a bowl, mix the crushed biscuits, softened cream cheese, Baileys, and powdered sugar until well combined.
  2. Shape the mixture into small 1-inch balls and place them on a parchment-lined baking sheet.
  3. Chill the bites in the fridge for at least 30 minutes to firm up.
  4. Once chilled, dip each bite into the melted chocolate, fully coating each one.
  5. Place them back on the baking sheet and sprinkle cocoa powder or colorful sprinkles on top while the chocolate is still soft.
  6. Refrigerate the cheesecake bites for another 15 minutes to set the chocolate.
