Crockpot Creamy Potato Hamburger Soup
A rich, comforting slow-cooker soup loaded with seasoned ground beef, tender potatoes, and a creamy, cheesy broth. Perfect for chilly days!
🛒 Ingredients
1 lb (450 g) ground beef
1 small onion, diced
3 cloves garlic, minced
4 cups potatoes, peeled and diced (about 4–5 medium)
3 cups beef broth
1 cup carrots, diced
1 cup celery, diced
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
1 teaspoon dried parsley
½ teaspoon dried thyme (optional)
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk (whole milk works best)
1 cup shredded cheddar cheese
½ cup sour cream
👩‍🍳 Instructions
1️⃣ Brown the beef
In a skillet over medium heat, cook the ground beef with diced onion until browned. Drain excess grease. Add garlic and cook for 1 minute more.
2️⃣ Add to crockpot
Transfer beef mixture to the crockpot. Add potatoes, carrots, celery, beef broth, salt, pepper, parsley, and thyme.
3️⃣ Slow cook
Cook on LOW for 6–7 hours
OR
Cook on HIGH for 3–4 hours
Until potatoes are fork-tender.
4️⃣ Make it creamy
About 30 minutes before serving:
In a small saucepan, melt butter over medium heat.
Whisk in flour and cook for 1–2 minutes to form a roux.
Slowly whisk in milk until smooth and thickened (about 3–5 minutes).
5️⃣ Finish the soup
Stir the milk mixture into the crockpot. Add shredded cheese and sour cream. Stir until melted and creamy. Let cook another 20–30 minutes on LOW.

Crumbled cooked bacon
Extra cheddar or Monterey Jack cheese
Diced green chilies
A splash of hot sauce
Chopped green onions for garnish
