Cabbage and Egg Stir-Fry

Ingredients:

  • 1/2 medium cabbage, thinly sliced
  • 3 large eggs
  • 2 tbsp oil (vegetable or olive oil)
  • 2 cloves garlic, minced
  • 1/2 tsp soy sauce (optional, for flavor)
  • Salt and pepper to taste
  • Green onions (optional, for garnish)

Instructions:

  1. Prepare the ingredients:
    • Thinly slice the cabbage and beat the eggs in a small bowl.
  2. Cook the eggs:
    • Heat 1 tbsp of oil in a large skillet or wok over medium heat.
    • Pour in the beaten eggs and scramble until just cooked. Remove the eggs from the pan and set them aside.
  3. Stir-fry the cabbage:
    • In the same pan, add the remaining oil and sauté the minced garlic until fragrant.
    • Add the sliced cabbage and stir-fry for 3–5 minutes until tender but still slightly crisp.
  4. Combine and season:
    • Return the scrambled eggs to the pan and mix them with the cabbage.
    • Add soy sauce (if using), salt, and pepper to taste. Stir well to combine.
  5. Serve:
    • Transfer the stir-fry to a plate and garnish with chopped green onions if desired. Serve as a light main dish or a side.
