Crispy Crostini with Balsamic Roasted Cranberries and Creamy Brie

Ingredients:

1 baguette, sliced into 1/2-inch pieces
Olive oil, for brushing
1 cup fresh or frozen cranberries
2 tbsp balsamic vinegar
1 tbsp honey or maple syrup
8 oz Brie cheese, sliced
Fresh rosemary or thyme, for garnish
Salt & pepper to taste
Instructions:

Prepare Crostini: Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and arrange on a baking sheet. Bake for 8-10 minutes until golden and crisp.

Make Balsamic Roasted Cranberries: In a bowl, mix cranberries, balsamic vinegar, honey, salt, and pepper. Spread on a lined baking sheet and roast for 10-12 minutes until cranberries are soft and caramelized.

Assemble Crostini: Place a slice of Brie on each crostini. Spoon balsamic-roasted cranberries over the Brie. Return to the oven for 3-5 minutes to melt the Brie.

Finish & Serve: Garnish with fresh rosemary or thyme. Serve warm for a sweet, tangy, and creamy bite.
