Cheesy Chicken Fritters
Crispy on the outside, juicy on the inside, and packed with melty cheese — these chicken fritters are perfect for dinner, meal prep, or even sandwiches!
🛒 Ingredients
2 cups cooked chicken, finely chopped or shredded
1 cup shredded mozzarella or cheddar cheese
2 large eggs
¼ cup mayonnaise (or Greek yogurt)
3 tablespoons all-purpose flour
2 tablespoons cornstarch
2 tablespoons chopped green onions
2 cloves garlic, minced
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
2–3 tablespoons oil for frying
👩🍳 Instructions
1️⃣ Prepare the Mixture
In a large bowl, combine chopped chicken, cheese, eggs, mayonnaise, flour, cornstarch, green onions, garlic, salt, pepper, and paprika.
Mix until well combined. The mixture should be thick and scoopable.
If too loose, add 1 more tablespoon flour.
2️⃣ Cook the Fritters
Heat oil in a large skillet over medium heat.
Scoop about 2 tablespoons of mixture per fritter and flatten slightly in the pan.
Cook 3–4 minutes per side until golden brown and cooked through.
3️⃣ Drain & Serve
Transfer to paper towel-lined plate to drain excess oil.
Serve warm.
