Stuffed Minced Meat Roll with Spinach and Mushrooms

This delicious stuffed meat roll is filled with a savory mixture of spinach, mushrooms, and cheese, making it a hearty and flavorful centerpiece for any meal!


Ingredients:

For the Meat Roll:

  • Ground beef or pork: 1½ pounds (700g)
  • Onion: 1 small, finely diced
  • Garlic: 2 cloves, minced
  • Breadcrumbs: ½ cup
  • Egg: 1 large
  • Paprika: 1 teaspoon
  • Dried oregano: 1 teaspoon
  • Salt: 1 teaspoon
  • Black pepper: ½ teaspoon

For the Filling:

  • Spinach: 2 cups (fresh or frozen, thawed and squeezed dry)
  • Mushrooms: 1 cup, finely chopped
  • Olive oil or butter: 1 tablespoon
  • Garlic: 1 clove, minced
  • Cream cheese or ricotta: 2 tablespoons
  • Shredded mozzarella or Parmesan: ½ cup
  • Salt and pepper: To taste

For Topping:

  • Shredded cheese: ¼ cup (optional)
  • Tomato sauce or gravy: For serving (optional)

Instructions:

1. Prepare the Filling

  1. Heat olive oil or butter in a skillet over medium heat. Sauté the garlic until fragrant.
  2. Add the mushrooms and cook until softened and any liquid has evaporated (about 5–7 minutes).
  3. Stir in the spinach and cook for another 2 minutes.
  4. Remove from heat and mix in the cream cheese and shredded cheese. Season with salt and pepper. Let it cool.

2. Prepare the Meat Mixture

  1. In a large bowl, combine the ground meat, onion, garlic, breadcrumbs, egg, paprika, oregano, salt, and pepper. Mix until fully incorporated but do not overmix.

3. Assemble the Roll

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place the meat mixture on the parchment paper and flatten it into a rectangular shape, about ½ inch thick.
  3. Spread the cooled filling evenly over the meat, leaving a small border around the edges.
  4. Carefully roll the meat into a log, using the parchment paper to help you. Pinch the edges to seal.

4. Bake

  1. Place the meat roll seam-side down on the baking sheet.
  2. Optional: Sprinkle shredded cheese over the top of the roll for extra flavor.
  3. Bake for 40–50 minutes, or until the internal temperature reaches 160°F (70°C).

5. Serve

  1. Let the meat roll rest for 5–10 minutes before slicing.
  2. Serve with tomato sauce, gravy, or a side of mashed potatoes and vegetables.
