Cheesy Mashed Potato Puffs
Fluffy on the inside, crispy and golden on the outside, with melty cheddar in every bite — the perfect way to use leftover mashed potatoes!
🛒 Ingredients:
2 cups mashed potatoes (cooled)
1 cup shredded cheddar cheese
2 large eggs
1/4 cup milk
1/4 cup grated Parmesan cheese
2 tablespoons chopped chives (or green onions)
1/2 teaspoon garlic powder
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
Optional: extra cheese for topping
👩🍳 Instructions:
Preheat oven
Preheat your oven to 400°F (200°C).
Lightly grease a mini muffin tin (or regular muffin tin for larger puffs).
Mix the batter
In a large bowl, combine mashed potatoes, cheddar, eggs, milk, Parmesan, chives, garlic powder, salt, and pepper.
Stir until smooth and well combined.
Fill the muffin tin
Spoon the mixture into each cup, filling almost to the top.
Sprinkle a little extra cheddar on top if desired.
Bake
Bake for 20–25 minutes (mini) or 30–35 minutes (regular size), until golden brown and crispy on the edges.
Cool slightly & remove
Let cool for 5 minutes, then gently remove with a spoon or knife.
🔥 Extra Crispy Tip:
Brush the tops lightly with melted butter before baking for an even crispier golden crust.
