Chewy Gooey Bars
Soft, buttery, rich, and irresistibly gooey in the center — these bars are perfect for potlucks, tea time, or a sweet treat at home.
🛒 Ingredients
For the Base:
1 box (15.25 oz) yellow cake mix
½ cup (115g) unsalted butter, melted
1 large egg
For the Gooey Layer:
8 oz (225g) cream cheese, softened
2 large eggs
1 teaspoon vanilla extract
3 ½ cups (about 400g) powdered sugar
👩‍🍳 Instructions
Preheat Oven
Preheat to 350°F (175°C).
Grease a 9×13-inch baking pan or line with parchment paper.
Make the Base
In a bowl, mix cake mix, melted butter, and 1 egg until a thick dough forms.
Press evenly into the bottom of the prepared pan.
Prepare the Gooey Layer
Beat cream cheese until smooth.
Add eggs and vanilla, mix well.
Gradually add powdered sugar and beat until smooth and creamy.
Assemble
Pour the cream cheese mixture over the crust and spread evenly.
Bake
Bake for 35–40 minutes.
The center should still be slightly soft — don’t overbake!
Cool Completely
Let cool fully before cutting (this helps keep the gooey texture).
🍰 Tips for Extra Gooey Bars
For chocolate version: use chocolate cake mix 🍫
Add ½ cup chocolate chips or white chocolate chips
Sprinkle powdered sugar on top before serving
