Creamy Spinach and Mushroom Spaghetti
Rich, silky cream sauce with tender mushrooms and fresh spinach — an easy, restaurant-style pasta you can make in under 30 minutes.
🛒 Ingredients (Serves 4)
12 oz (340 g) spaghetti
2 tablespoons olive oil or butter
8 oz (225 g) mushrooms, sliced (button or cremini)
3 cloves garlic, minced
½ small onion, finely diced
3 cups fresh spinach
1 cup heavy cream
½ cup grated Parmesan cheese
½ cup pasta cooking water (reserved)
½ teaspoon Italian seasoning
Salt and black pepper to taste
Pinch red pepper flakes (optional)
👩🍳 Instructions
1️⃣ Cook the Pasta
Bring a large pot of salted water to a boil.
Cook spaghetti according to package instructions until al dente.
Reserve ½ cup pasta water, then drain.
2️⃣ Sauté the Vegetables
Heat olive oil or butter in a large skillet over medium heat.
Add onions and cook 2–3 minutes until soft.
Add mushrooms and cook 5–6 minutes until browned and tender.
Stir in garlic and cook 30 seconds.
3️⃣ Add Spinach
Add spinach in batches.
Cook until wilted (about 1–2 minutes).
4️⃣ Make the Cream Sauce
Pour in heavy cream.
Add Italian seasoning, salt, pepper, and red pepper flakes if using.
Simmer 3–4 minutes until slightly thickened.
Stir in Parmesan cheese until melted and smooth.
5️⃣ Combine
Add cooked spaghetti to the skillet.
Toss gently to coat.
Add reserved pasta water a little at a time to loosen the sauce if needed.
6️⃣ Finish & Serve
Taste and adjust seasoning.
Sprinkle extra Parmesan and fresh parsley on top.
Serve immediately.
