Butter Poached Lobster Tails
Tender, sweet lobster gently poached in warm, seasoned butter — silky, luxurious, and surprisingly easy to make at home.
🛒 Ingredients (Serves 2–4)
4 lobster tails (4–6 oz each)
1 cup (2 sticks / 225 g) unsalted butter
2 tablespoons water
2 cloves garlic, smashed
2 sprigs fresh thyme (or parsley)
1 tablespoon lemon juice
Salt to taste
Fresh cracked black pepper (optional)
Lemon wedges, for serving
👩‍🍳 Instructions
1️⃣ Prep the Lobster
Using kitchen shears, cut down the top shell lengthwise.
Gently loosen the meat and lift it slightly above the shell (optional for presentation).
Pat dry lightly with paper towel.
2️⃣ Make the Butter Poaching Liquid
This method is called beurre monté (emulsified butter):
In a saucepan over low heat, add 2 tablespoons water.
Slowly whisk in cold butter, one piece at a time.
Keep heat LOW — butter should stay between 160–180°F (70–80°C).
Do not let it boil or separate.
3️⃣ Add Flavor
Add garlic and thyme to the butter.
Let infuse gently for 2–3 minutes.
4️⃣ Poach the Lobster
Submerge lobster tails in the warm butter.
Poach gently for 6–8 minutes (depending on size).
Lobster is done when opaque and internal temperature reaches 135–140°F (57–60°C).
Do NOT boil — gentle heat is key.
5️⃣ Finish
Remove from butter.
Drizzle with lemon juice.
Sprinkle lightly with salt and pepper.
Serve immediately.
