Air Fryer Buffalo Chicken Mozzarella Sticks

Ingredients:

1 cup cooked shredded chicken
1/4 cup buffalo sauce (plus more for dipping)
8 mozzarella string cheese sticks, halved
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
Nonstick cooking spray

Directions:

In a bowl, mix the shredded chicken and buffalo sauce until evenly coated.
Take half a mozzarella stick and wrap a small amount of buffalo chicken around it, pressing gently to form a compact layer. Repeat with the remaining cheese sticks.
Set up a breading station: place the flour in one bowl, the beaten eggs in another, and combine the breadcrumbs, Parmesan, garlic powder, smoked paprika, and salt in a third bowl.
Coat each buffalo chicken-wrapped cheese stick in flour, then dip into the egg mixture, and finally coat with the breadcrumb mixture, pressing to adhere. Repeat for all sticks.
Preheat your air fryer to 375°F (190°C).
Arrange the mozzarella sticks in the air fryer basket in a single layer, making sure they don’t touch. Lightly spray with nonstick cooking spray.
Air fry for 6-8 minutes, flipping halfway through, until golden brown and crispy.
Serve immediately with extra buffalo sauce, ranch, or blue cheese dressing for dipping.
