Ingredients:
- 200g digestive biscuits, crushed
- 100g cream cheese, softened
- 150ml Baileys Irish Cream
- 100g powdered sugar
- 200g chocolate, melted (for coating)
- Cocoa powder or sprinkles (for garnish)
Instructions:
- In a bowl, mix the crushed biscuits, softened cream cheese, Baileys, and powdered sugar until well combined.
- Shape the mixture into small 1-inch balls and place them on a parchment-lined baking sheet.
- Chill the bites in the fridge for at least 30 minutes to firm up.
- Once chilled, dip each bite into the melted chocolate, fully coating each one.
- Place them back on the baking sheet and sprinkle cocoa powder or colorful sprinkles on top while the chocolate is still soft.
- Refrigerate the cheesecake bites for another 15 minutes to set the chocolate.
