Baileys Chocolate Mousse:
1 cup heavy cream
8 oz semi-sweet chocolate, chopped
1/4 cup Baileys Irish Cream
1 teaspoon vanilla extract
Whipped Cream Layer:
1 cup heavy cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
Layers & Garnish:
1 chocolate cake, crumbled (store-bought or homemade)
Chocolate shavings or cocoa powder, for garnish
Fresh berries (optional)
Directions:
Prepare the Baileys Chocolate Mousse: In a saucepan, heat 1 cup of heavy cream over medium heat until warm, but not boiling. Remove from heat, add the chopped chocolate, and whisk until melted and smooth. Stir in the Baileys Irish Cream and vanilla extract. Allow the mixture to cool, then refrigerate for 30 minutes until slightly thickened.
Make the Whipped Cream Layer: In a large mixing bowl, beat 1 cup of heavy cream, powdered sugar, and vanilla extract until soft peaks form. Set aside.
Assemble the Trifle: In a trifle bowl or individual dessert cups, layer crumbled chocolate cake, Baileys chocolate mousse, and whipped cream. Repeat layers until the trifle bowl is filled, ending with a whipped cream layer on top.
Garnish and Serve: Top with chocolate shavings, a dusting of cocoa powder, or fresh berries for a pop of color. Chill in the refrigerator for at least 1 hour before serving to allow flavors to meld.
