Cheesy Mashed Potato Puffs

Ingredients:

  • 2 cups mashed potatoes (leftover or freshly made, cooled)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 2 large eggs
  • 1/4 cup milk or cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped green onions or chives (optional)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Nonstick cooking spray

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C) and grease a muffin tin with nonstick cooking spray.
  2. Prepare the potato mixture:
    • In a large mixing bowl, combine the mashed potatoes, shredded cheese, eggs, milk, Parmesan cheese, green onions (if using), garlic powder, salt, and pepper. Mix until smooth and well-combined.
  3. Fill the muffin tin:
    • Spoon the potato mixture into the prepared muffin tin, filling each cup about 3/4 full. Smooth the tops with the back of a spoon.
  4. Bake:
    • Place the muffin tin in the oven and bake for 20–25 minutes, or until the potato puffs are golden brown and set.
  5. Cool and serve:
    • Allow the puffs to cool for a few minutes in the tin, then gently remove them using a butter knife or spatula. Serve warm.
