Chicken Alfredo Recipe (Serves 4)
Ingredients:
- 12 oz (340g) fettuccine pasta
- 2 tbsp olive oil or unsalted butter
- 2 large chicken breasts, sliced thinly
- Salt and pepper, to taste
- 4 cloves garlic, minced
- 2 cups heavy cream
- 1 cup grated Parmesan cheese (plus extra for garnish)
- 1/2 cup shredded mozzarella cheese (optional for extra creaminess)
- 1/4 tsp nutmeg (optional, for flavor depth)
- 1/4 cup chopped parsley (optional, for garnish)
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook the fettuccine according to package instructions until al dente.
- Reserve 1 cup of pasta water before draining.
- Cook the Chicken:
- Heat olive oil or butter in a large skillet over medium-high heat.
- Season the chicken slices with salt and pepper.
- Sauté the chicken in the skillet for 4-5 minutes per side or until golden brown and cooked through. Remove and set aside.
- Make the Alfredo Sauce:
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for 1-2 minutes until fragrant (be careful not to burn it).
- Slowly pour in the heavy cream, stirring continuously.
- Add Parmesan cheese and mozzarella (if using), stirring until melted and smooth.
- Add a pinch of nutmeg for an added layer of flavor.
- Season with additional salt and pepper to taste.
- Combine:
- Add the cooked fettuccine to the skillet and toss to coat in the creamy sauce.
- If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is reached.
- Add the Chicken:
- Slice the cooked chicken into strips and arrange it on top of the pasta. Toss gently to combine.
- Serve:
- Garnish with chopped parsley and additional Parmesan cheese.
