Chicken Alfredo


Chicken Alfredo Recipe (Serves 4)

Ingredients:

  • 12 oz (340g) fettuccine pasta
  • 2 tbsp olive oil or unsalted butter
  • 2 large chicken breasts, sliced thinly
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese (plus extra for garnish)
  • 1/2 cup shredded mozzarella cheese (optional for extra creaminess)
  • 1/4 tsp nutmeg (optional, for flavor depth)
  • 1/4 cup chopped parsley (optional, for garnish)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the fettuccine according to package instructions until al dente.
    • Reserve 1 cup of pasta water before draining.
  2. Cook the Chicken:
    • Heat olive oil or butter in a large skillet over medium-high heat.
    • Season the chicken slices with salt and pepper.
    • Sauté the chicken in the skillet for 4-5 minutes per side or until golden brown and cooked through. Remove and set aside.
  3. Make the Alfredo Sauce:
    • In the same skillet, reduce heat to medium and add minced garlic. Sauté for 1-2 minutes until fragrant (be careful not to burn it).
    • Slowly pour in the heavy cream, stirring continuously.
    • Add Parmesan cheese and mozzarella (if using), stirring until melted and smooth.
    • Add a pinch of nutmeg for an added layer of flavor.
    • Season with additional salt and pepper to taste.
  4. Combine:
    • Add the cooked fettuccine to the skillet and toss to coat in the creamy sauce.
    • If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is reached.
  5. Add the Chicken:
    • Slice the cooked chicken into strips and arrange it on top of the pasta. Toss gently to combine.
  6. Serve:
    • Garnish with chopped parsley and additional Parmesan cheese.
    • Serve immediately and enjoy your homemade Chicken Alfredo!
