Ingredients:
For the Sweet Potato Cornbread:
- 1 cup mashed sweet potatoes
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup honey
- 1 tablespoon baking powder
- 1/2 teaspoon salt 🧂
- 1 teaspoon ground cinnamon
- 2 large eggs
- 1/2 cup melted butter 🧈
- 1 cup buttermilk 🥛
For the Cinnamon Honey Butter:
- 1/4 cup honey
- 1/2 teaspoon ground cinnamon
- 1/2 cup softened butter 🧈
Instructions:
- Preheat your oven to 375F 190C and grease or line your baking dish with parchment paper.
- In a large bowl, mix together cornmeal, flour, baking powder, salt, and cinnamon.
- In another bowl, combine mashed sweet potatoes, eggs, melted butter, buttermilk, and honey. Stir until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until golden and a toothpick comes out clean.
- While the cornbread bakes, mix together honey, cinnamon, and softened butter in a small bowl.
- Once the cornbread is done, let it cool slightly and serve with a dollop of cinnamon honey butter on top.
