Ingredients:
8 oz penne pasta
2 boneless, skinless chicken breasts
2 teaspoons Cajun seasoning
2 tablespoons olive oil
1 red bell pepper, diced
1 green bell pepper, diced
3 cloves garlic, minced
1 ½ cups heavy cream
½ cup grated Parmesan cheese
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Cook the Pasta:
In a large pot, boil salted water.
Add penne pasta and cook according to package instructions until al dente.
Drain and set aside.
Prepare the Chicken:
Slice chicken breasts into thin strips.
Season with 1 teaspoon of Cajun seasoning, salt, and pepper.
Cook the Chicken:
In a large skillet over medium heat, add 1 tablespoon olive oil.
Add the seasoned chicken strips.
Cook until no longer pink, about 5-7 minutes.
Remove from skillet and set aside.
Sauté the Vegetables:
In the same skillet, add the remaining 1 tablespoon olive oil.
Add diced red and green bell peppers.
Sauté for 3-4 minutes until they begin to soften.
Add minced garlic and sauté for an additional 30 seconds until fragrant.
Prepare the Sauce:
Pour in the heavy cream, stirring gently.
Sprinkle in the remaining 1 teaspoon of Cajun seasoning.
Bring the mixture to a gentle simmer.
Add grated Parmesan cheese, stirring until the cheese melts and the sauce slightly thickens.
Season with additional salt and pepper to taste.
Combine Pasta and Chicken:
Return the cooked chicken to the skillet.
Add the drained pasta.
Toss everything together to ensure even coating with the sauce.
Allow to cook for an additional 2-3 minutes to heat through.
Serve:
Divide the pasta into serving bowls.
Garnish with freshly chopped parsley.
