Crispy Zucchini Fries with Garlic Yogurt Dip

Crunchy on the outside, tender on the inside, these Crispy Zucchini Fries are a guilt-free snack or side dish you’ll crave again and again. Paired with a tangy, flavorful garlic yogurt dip, they’re the perfect healthy alternative to traditional fries!


Ingredients

For the Zucchini Fries:

  • 2 medium zucchinis, cut into sticks
  • 1 cup breadcrumbs (or panko for extra crunch)
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs (beaten)
  • 1/2 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Cooking spray (or a drizzle of olive oil)

For the Garlic Yogurt Dip:

  • 1 cup plain Greek yogurt
  • 1 clove garlic (minced or grated)
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • 1 tbsp chopped fresh dill (or parsley)
  • Salt and pepper to taste

Instructions

Step 1: Prep the Zucchini Fries

  1. Preheat your oven to 425°F (220°C) or set your air fryer to 400°F (200°C).
  2. Pat zucchini sticks dry with a paper towel to remove excess moisture.
  3. Set up a breading station:
    • Bowl 1: All-purpose flour, salt, and pepper.
    • Bowl 2: Beaten eggs.
    • Bowl 3: Breadcrumbs, Parmesan cheese, garlic powder, and paprika.
  4. Dredge each zucchini stick in flour, then dip into the egg mixture, and finally coat with the breadcrumb mixture. Press gently to ensure the crumbs stick.

Step 2: Bake or Air Fry

  • Oven Method: Arrange the coated zucchini sticks on a baking sheet lined with parchment paper. Lightly spray with cooking spray or drizzle with olive oil. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
  • Air Fryer Method: Arrange the zucchini sticks in a single layer in the air fryer basket. Air fry for 10-12 minutes, shaking the basket halfway through, until golden and crispy.

Step 3: Make the Garlic Yogurt Dip

  1. In a small bowl, mix Greek yogurt, minced garlic, lemon juice, olive oil, dill, salt, and pepper.
  2. Stir well and chill in the refrigerator until ready to serve.
