Directions:
For the Crust:
Preheat oven to 325°F (160°C). Mix graham cracker crumbs and melted butter, press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then cool.
For the Cheesecake Filling:
Beat cream cheese and sugar until smooth. Mix in peanut butter and vanilla. Add eggs one at a time, then stir in heavy cream. Pour over crust. Bake 50-60 minutes until set. Cool and refrigerate 4 hours or overnight.
For the Caramel Layer:
Melt sugar in a saucepan until golden. Add butter, then slowly stir in cream until smooth. Cool slightly, pour over chilled cheesecake. Refrigerate 30 minutes.
For Topping:
Arrange banana slices on cheesecake, sprinkle with peanuts, and drizzle with caramel sauce.
