Easy No-Oven Sponge Cake

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup oil (vegetable or melted butter)
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 large egg (or 1/4 cup yogurt for an eggless version)
  • Pinch of salt

Instructions:

  1. Prepare Your Pan and Steamer:
    • Grease a round cake pan or any heatproof container with oil or butter and line it with parchment paper.
    • Place a large, heavy-bottomed pot or deep pan on the stove. Add a stand, trivet, or a layer of salt to the bottom to prevent direct contact between the cake pan and the pot. Preheat this setup over medium heat with the lid on for 5–10 minutes.
  2. Mix the Dry Ingredients:
    • In a mixing bowl, sift together the flour, baking powder, baking soda, and salt. Mix well.
  3. Mix the Wet Ingredients:
    • In another bowl, whisk together the sugar, oil, milk, vanilla extract, and egg (or yogurt) until smooth.
  4. Combine the Ingredients:
    • Gradually add the wet ingredients to the dry ingredients, mixing gently with a spatula until you have a smooth batter. Do not overmix.
  5. Pour the Batter:
    • Pour the batter into the prepared cake pan and tap it gently on the counter to remove air bubbles.
  6. Steam or Bake on the Stove:
    • Place the cake pan into the preheated pot, ensuring it’s on the stand or trivet. Cover the pot with the lid, wrapping it in a clean kitchen towel to prevent condensation from dripping onto the cake.
    • Cook on low to medium heat for 30–40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and Serve:
    • Once cooked, carefully remove the cake from the pot and let it cool for 10–15 minutes before removing it from the pan.
    • Decorate with powdered sugar, frosting, or fruit if desired, and enjoy!
